We’re a smart,  vibrant 4 star Country House Hotel and Restaurant and we’ve been thrilling guests for 50 years.

We have a 40 cover restaurant, 16 luxury en suite bedrooms and a thriving wedding business.  We have 2 AA rosettes, and a host of recent awards, including “Devon Small Hotel of the Year”, “Best fine dining restaurant in Devon” and “Best wedding venue in Devon”.  We have a fantastic team of friendly, enthusiastic staff who care passionately about the business.

Sous Chef

Salary & benefits

To £25K + tips + 28 days holiday + pension


Leadership and Management

  • To help motivate and manage the brigade, instilling a “can do” attitude and leading by example
  • To act as No. 2 to the Head Chef, and deputise in his absence.
  • To be able to competently run each section of the kitchen, including pastry
  • To follow all Health & Safety, Food Safety, HR, Allergen and other Compliance requirements

Menu Development

  • To work with Head Chef to create and plan menus, skilfully balancing seasonality, taste, texture, appearance, portion size and cost. To review regularly, taking on board guest feedback.

Food Quality

  • To ensure nothing leaves the kitchen that you’re not proud to serve
  • To ensure that everyone is using the recipes provided and sticking to guidelines


  • To ensure all the new health + hygiene protocols are strictly adhered to every day
  • To always ensure high standards of cleanliness and tidiness

Managing Costs and Margins

  • To minimise waste by getting things done right first time
  • To keep order levels tight to avoid wastage, whilst minimising out of stocks

Interface with guests

  • In the absence of Head Chef, to hold bespoke menu meetings with guests for weddings and large parties
  • To liaise with guests regarding complex allergies/dietary needs


To succeed in this role you will need at least 3 years’ experience, including fine dining. You will also need to have had previous experience running the kitchen in the absence of Head Chef.

You will need your own transport and accommodation.
